Each character is stored as a bezier path instead of a short reference into a font program, and a page of body text can contain thousands of them. The file often grows noticeably; run it through Compress PDF afterward if size matters.
Fonts embedded in the PDF are traced exactly, so the appearance stays the same. If a font isn't embedded, Ghostscript substitutes a similar one before outlining, so check the result when a document relies on system fonts.
